Can you guys give me some encouragment? I want to talk to this guy, but I'm so nervous!?

well the right way to do this would be if it's a local store just say "hey i've been shopping here for a while and you seem like a cool/nice/funny/sweet/pick your adjective here guy, i'm Tasha, what's your name"? i'm sure he'll appreciate it since he doesn't seem to be able to get the guts together to talk to you either. just make sure you're not getting in the way of this work. odds are though, he'll enjoy someone to talk to if he's working around food the whole day, it's not very exciting of a job. good luck and don't be nervous, he'll like it :)
